The Pastry Chef for Leo's River Oaks has overall leadership for all culinary operations which includes the development and review of all menus, recipes and costing and establishment of all quality standards for food product. Areas of oversight include the production facility, catering and all food service outlets.
 
  Responsibilities 
  • Develops and executes short and long-term menu strategies that support brand positioning and business needs. 
  • Oversee the consistent application of culinary development standards, processes and established methodologies; ensures effective operations processes to support operational excellence.
  • Provides strategic direction to develop food within specified cost parameters to ensure the achievement of business targets (guest count, margin, menu mix and sales) while delivering on quality requirements.
  • Provide leadership to the Executive Chef in their oversight of the day-to-day culinary operations and activities including preparation, production, development and execution of recipes.
  • Works with Director of Operations and General Manager in developing and leveraging Company purchasing and supplier networks; achieves cost efficiencies while procuring quality ingredients and introducing new food
  • Supports training, development, and other professional growth opportunities; manages individual and team performance through coaching, feedback, and performance management discussions.
  • Oversee planning, organizing, monitoring, and control of all aspects of a project and ensures engagement, commitment, and risk management; provides ongoing communications on project status to ensure senior leadership alignment
  • Comply with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced by the local health department and Facility Audits
  • Perform additional duties as assigned
 Qualifications/Requirements
  • Minimum of 4 years as a Pastry Chef while also achieving tenure in high volume fine dining establishments 
  • Proven familiarity with doughs, yeast-raised breads, custards, souffles 
  • Must be available to work on weekends, holidays and nights 
  •  Ability to stand for long period so time, lift 25 lbs., and bend, climb or work in confined spaces
  •  Must enjoy and be able to succeed in a fast-paced work environment

  • Extensive menu, product and concept development experience
  • Demonstrated ability to develop culinary and beverage products in a multiple unit, high-volume environment
  • Project Management: Demonstrates the capability to achieve desired outcomes on time and within budget through the application of project management principles and techniques
  • Demonstrate knowledge of current consumer and industry behaviors, trends, attitudes, preferences, and needs
  • Drive individual talent and build strong capability in teams
  • Ability to develop culinary products in a high-volume environment
  • Proven excellent verbal and written communication, interpersonal, organizational and multi-tasking skills.
  • A strong passion for delivering the highest quality of guest service.
  • Strong ability to collaborate cross-functionally, specifically with the Culinary and Beverage execution teams
  • Motivate and supervise any BOH staff.
  • Ability to achieve results through the flawless execution of strategies and objectives.
  • Excellent management skills in leading a diverse team and working under tight and fast track deadlines.
  • Strong P&L experience, command of budgeting and cost controls
  • Ability to deal well with ambiguity and constant change.
  • Knowledge and maintenance of all costs/food purchasing function/recipe costing/yield testing
  • Knowledge of food related POS systems.

Compensation: $70,000.00 - $80,000.00 per year
